The Everyday Gourmet: Rediscovering the Lost Art of Cooking. This a series of 24 " lectures" offered by The Great Courses website. The series is informative and gives a wide range of back up information that you will not see on standard cooking videos. The chef who gives the presentations is extremely knowledgeable and when he speaks it's as though he is speaking directly to you. It also comes with a course guide that is packed with additional information.You know, the Alton Brown series Good Eats was pretty good in terms of food science, technique, and humor. The recipes were pretty good too.

It would be a lot better if Alton weren't so smug and self-serving, but hey, you can't have everything.
There are probably hundreds on YouTube of varying quality. The best, I think, would be on America's Test Kitchen. They also have an excellent on line cooking school at America's Test Kitchen Cooking School. Some of the lessons are on technique, such as knife skills. The best way to learn most techniques is by preparing recipes anyway.
Gordon Ramsey's Ultimate Cooking Course is 20-videos worth of essential knowledge and technique to master most cooking skills. What he stresses is the basic knowledge you can use to figure out how to cook anything you want.
