Gordon Ramsey's Ultimate Cooking Course is 20-videos worth of essential knowledge and technique to master most cooking skills. What he stresses is the basic knowledge you can use to figure out how to cook anything you want.
Here's how he describes his own course:
I want to teach you how to cook good food at home. By stripping away all the hard graft and complexity, anyone can produce mouth-watering recipes. Put simply, I'm going to show you how to cook yourself into a better cook.
That doesn't do the course justice. It really is thorough on the essentials you need to know how to cook, even without recipes.
