What is the difference between doing push-ups every day and doing them every other day?
Depends on number and intensity. Folks in military basic training generally do pushups and other bodyweight exercises on a daily basis with no harm. Generally, repetitions are fairly limited.
If you're doing a reasonable amount of repetitions, so that you don't approach your "failure point", then likely you can get away with but a single rest day per week.
But if you're working very hard, to "failure", then you really should allow more rest days.
A further caveat:
As I always say, pushups are not a magical full-body exercise. They only work a few muscles and should be considered only a PART of a good, full-body exercise routine.
