I agree with Christian Chuquihuara. Peruvian cuisine has not yet reached critical mass. It's still bubbling away in the background. Some chefs are starting to make a noise internationally and foodies love what's happening.A high percentage of visitors to Peru go primarily for the food. So the quality is recognized.
My favorite restaurant of any type was Fina Estampa on Van Ness- http://www.yelp.com/biz/fina-est.... Their bisteak a lo pobre, Spanish tortilla, chicharron, and chimmichurri (yes, I know this is more Argentinian in origin) were amazing. They closed 2 years ago, but are about to reopen on Bush
